White Sketty Dinner from 12-12-12

Yey, on to day 2 of my first [EVER] blog I have to tell you about dinner from last night

So ya knoe how you alwayz save the best for last? well while the BEST batch of cookies (the minty (green) ones ) are in the oven, I took the granola bars (that I had thawing on the counter) and cut them, it was a pain in the ass! However they are good. So I cut and bagged em up. By the time I was half way threw the cutting part, the cookies were done, so I pulled them out the oven. Finished up the granola bars, and wrapped them up.


LIKE SO, then put like 4 of them in a zip-lock bag

Moved my pretty green cookies to the wire rack to finish cooling, i put the rest of the cookies up, and the green ones in a separate container, so I can keep the minty green ones all to my self!

Chicken Spaghetti
                                       INGREDIENTS


  • 8 ounces angel hair pasta
  • 2 cups chopped, grilled chicken or 1 large can of chicken
  • 1 can (10 3/4 ounces) cream of mushroom soup (98% fat free or regular)
  • 1 can (10 3/4 ounces) cream of chicken soup (98% fat free or regular)
  • 1 can (10 ounces) Rotel diced tomatoes and green chiles, undrained
  • 8 ounces sour cream
  • Sprinkling of Parmesan or Mexican-blend cheese
    1 packet of ranch
    1 can (4 ounces) mushrooms (drained)


    Preheat oven to 350 degrees.



Boil pasta as package directs and drain. Mix all other ingredients (except cheese), add a half can of water, add to cooked pasta and put in a 9" x 13" baking dish. Cover with foil and bake 30 minutes or until hot and bubbly. Sprinkle with your choice of cheese and return to oven to melt.










YUMMY!! Throw in some garlic bread when you put the sketty in to melt the cheese, and all is well! 
Dinner and lunch for a few dayz! score!!

This is my first [EVER] blog. so work with me, it can only get better from here, right? Ok. I have had a hankerin to make some cookies... for days and days. So I finally broke down and made some. But before I get to that, I came across some extra cheerios and was wondering if I could make my own granola bars with them. Keep in mind I was in a 'sprinkle' mood today. I looked around and finally found a recipe that i actually had all the ingredients for, YEY! And it happened to be no bake. Could it get any better! Ok, Ok, here it is:

No Bake Granola Bars




  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup honey
  • 1/2 cup peanut butter
  • 2 cups cheerios
  • 2 cups rolled oats
  • press the chocolate chips on top or they will melt (and they do, actually. thats why mine is all smudgey) 

Instructions
  1. In a small pan, mix brown sugar and honey. Heat and stir until boiling.
  2. Remove from heat and stir in peanut butter. Pour in measured cereal and oats and mix well.
  3. Spray pan, she says 8x10, I used 8" round, (thats what I had on hand) with cooking spray. Press mess in firmly. 
  4. I topped with sprinkles, Pressed a handful of chocolate chips on top, a melty mess...
  5. She says to Cool and cut into 15 bars, However, I threw mine into the freezer for a bit, (long enough to make some cookies) took them out and set them on the counter long enough to prep dinner(below) then cut em up, and bagged em up, and now half are in the freezer and the other half are on the counter, probably going to get eaten by Trevor (the husband) in the morning. 
  6. You can freeze these bars individually and thaw on the day you want to eat. Or store in an airtight container three to five days.

Cream Cheese Chocolate Chip Cookies
Prep Time: 20 minutes
Cook Time: 15 minutes
Yield: about 48 cookies






  • 2 & 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 & 1/2 teaspoons vanilla extract
  • 1 & 1/2 cups semisweet chocolate chips

Instructions
Preheat oven to 350°. Grease or line baking pans.
Whisk together flour, baking powder, and salt. Set aside.
Beat butter, cream cheese, sugar, and brown sugar until fluffy. Add eggs, 1 at a time, mixing well after each addition. Mix in vanilla.
Gradually add flour mixture, mixing until almost combined. Add chocolate chips, stirring until dough is thoroughly mixed.
Drop dough by tablespoonfuls onto prepared pans. Bake 12-15 minutes, or until edges are lightly browned. (These cookies will not brown like classic chocolate chip cookies.)
Cool cookies completely on pan on wire racks.

Ok, my part! When I mixed in the chocolate chips, I was a bit short, 1/2 a cup or so because I needed them for the granola bars, So I added some SPRINKLES!! 
Because No one in my house likes mint, I have to make my own minty goodness... so after I made bout 40 of 'their' cookies, I made the rest for me. (I keep peppermint oil around the house for random things and found out that) I can put 2 drops of peppermint oil in cookies its like adding 1 tsp of peppermint extract. 
So with the rest of the cookie batter, I added 2 drops of peppermint oil mixed it up dropped them on the pan, threw them in the oven, (unfortunately  had to let them cool) and OMG!!
